Curried Lentils

Another recipe inspired by Food Network Magazine.  Curried Lentils, served with Salmon and fresh Green Beans from today's farmer's market.

Recipe for 3:  Heat 1 Tbsp. olive oil in a saucepan.  Add 1 1/2 tsp. ginger, 1 clove garlic, 1/2 shallot, 1/3 tsp. curry powder, 3/4 tsp. paprika and 1/4 cup sweet pepper.  Cook a few minutes.  Add 1/4 cup lentils and 1 1/4 cups water.  Simmer covered for 20-25 minutes.

This would have been good with cornbread.  We shared a piece of whole grain toast instead!

Now what to do with those gigantic Romney peaches. . .
